Chicken Goodies Rice Bowl

This rice bowl has mouthwatering juicy chicken, onions & peppers, and hard-boiled eggs


Ingredients 

  • Onion Powder 

  • Garlic Powder 

  • Old Bay Seasoning 

  • Salt Pepper 

  • 20 oz Frozen Pepper & Onion Blend 

  • 4 Boneless, Skinless Chicken Breast 

  • Cooking oil 

  • 4 eggs 

  • 2 cups dry white rice 

  • Water






Instructions

  1. In a skillet oil the pan with cooking oil on medium to high heat and simmer. Add the chicken to simmering oil and season one side with all seasonings. Once the chicken starts to turn white flip it. Then season that side and let the other side cook till white and flip again and cook for about a minute. 

  2. Put partially cooked chicken on a baking sheet and cook in the oven at 400 degrees Fahrenheit for 20 minutes or until the internal temperature is 165 degrees Fahrenheit. 

  3. While the chicken is cooking in the oven, put water and white rice in a saucepan. Bring to a boil. Turn heat to low and cover with a lid. Simmer for 20 minutes or until all the water is absorbed. 

  4. In another saucepan add water to boil eggs. Once water is boiling add eggs in and let boil for 10 minutes. 

  5. While white rice and eggs are cooking, put 1 tbsp of cooking oil in a skillet and wait till it simmers at medium heat to high heat. Add the package of onions and peppers in a skillet. Cook for about 5 minutes or until tender.

  6.  Fluff rice with a fork and then add to a bowl for serving as the bottom layer. Add peppers on top of rice then add chicken on top. If you don't want whole chicken, shred or cube chicken then add on top. Peel boiled eggs and lastly place in the bowl. 

  7. Serve and enjoy! :)
