Bear Bacon Burgers

These tasty, juicy bear burgers make a change from normal beef patties.


Ingredients 

  • 6 slices bacon, minced

  • 2 tablespoons olive oil

  • 2 shallots, minced

  • 1 teaspoon minced garlic

  • 2 pounds ground bear meat

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon dry Italian seasoning

  • salt and pepper to taste

  • 1 large egg, beaten to mix

  • 6 hamburger buns

Instructions

  1. Gather all ingredients.

  2. Cook minced bacon in a skillet over medium heat until browned and crispy.

  3. Pour bacon and grease into a heatproof bowl and allow to cool.

  4. Heat oil in a skillet. Add shallots and garlic. Cook and stir until softened. Mix with bacon.

  5. Mix bear meat with cooled bacon mixture. Season with Worcestershire sauce, dry Italian seasoning, salt, and pepper. Stir in egg until evenly combined. Refrigerate for 20 minutes.

  6. Shape venison mixture into 6 patties.

  7. Put patties in the skillet and cook for 5 minutes. Flip and cook for another 5 minutes. Increase heat to medium or medium-high, cover, and continue to cook, flipping occasionally, until burgers are cooked through and juicy, 5 to 10 minutes more. 

  8. Serve on toasted hamburger buns with your favorite toppings
